He teaches and demonstrates the sessoning and smoking process and delivers the desired expectation.  The hands on part of the class is great, mixing our own rubs based on the 8-3-1-1 ratio made a lot of since. The food I brough back was great, My wife loved the chicken I prepared in class and the Ribs didnt hang around long either. Ideas with spices for rubs and little
changes in my preparation that made a big difference in the finished product. I've been practicing at home. The part you taught on timing, for putting on and taking off has helped in preparing more than one meat at a time and keeping it all hot, this way I can regulate my smoker temp with better control. I wished my wife could have been able to come, but hopefully we can come back again for a class for her and I'm sure I'll have more questions then to. Thank you for your offer for additional advice as I continue learning and experimenting. Nice to know I have someone that's willing to help as I keep learning.

Bob, thanks again for your class, I went in just wanting to sell sandwiches, did OK so I thought I would try a local contest, Q-Fest in Milbank, SD. Thought it would be fun, I got there on Friday night and seen all the large competition smokers and trailers and the teams that went with them. I felt like pulling out with my $179 Menard's cooker. There was a total of 18 teams from 3 different states. I asked another team if they would help me lift my smoker off my trailer. I was nervous and slightly unprepared, Burnt my chicken, had it to close to the fire box, but turned it in any way. My brisket forgot part of my injection / marinade, but worked with what I had. Ribs went good. When they said to meet for announcing the winners, my wife said I had to go, I was depressed. Went down reluctantly, to my surprise my Ribs finished 1st, When they called my name, my wife had to tell me to go up for my trophy, I was in shock. Then they called my name again for Grand Champion, I was dumb founded, I credit my winning to you and what you taught me. On my ribs all 6 judges voted them the best, hands down. My wife did up the boxes and they looked great, she even made my burnt chicken look good. Thanks again

This class was Great!  We learned about spices, made our own rubs and tested it on ribs and chicken.  The information on pit's and pit designs along with temperature.  Learning how to cut meat and present it for competition was very helpful.  Information on tools and techniques will help me increase my ability in food preparation.  This is a must take class!!

I loved this class!  I like cooking and think that I know a fair bit about it, but I learned So Much I never knew about BBQing meat.  The class format is geared toward different learning styles, with a good mix of lecture, presentation, and hands on trying.  Bob and Daniel kept our interest throughout the 8 hour day, and we ate very well!  Our instructors were friendly and approchable, and seem sincerely interested in our questions  they answered everything we could think of, and have encouraged us to call or email them with anything that might occur to us, even years down the road.  My husband and I both enjored our day with you, and we'er glad you offer such a wonderful service for those of us who want to learn about BBQ.  Thanks, guys!
