I had a great time and learned a lot and ate a ton of Que. You gave me some great ideas on how to improve what I thought was already good que.
The food I brough back was great, My wife loved the chicken I prepared in class and the Ribs didnt hang around long either. Ideas with spices for rubs and little changes in my preparation that made a big difference in the finished product. Ive been practicing at home. The part you taught on timing, for putting on and taking off has helped in preparing more than one meat at a time and keeping it all hot, this way I can regulate my smoker temp with better control. I wished my wife could have been able to come, but hopefully we can come back again for a class for her and Im sure Ill have more questions then to. Thank you for your offer for additional advice as I continue learning and experimenting. Nice to know I have someone thats willing to help as I keep learning.

Bob, thanks again for your class, I went in just wanting to sell sandwiches, did OK so I thought I would try a local contest, Q-Fest in Milbank, SD. Thought it would be fun, I got there on Friday night and seen all the large competition smokers and trailers and the teams that went with them. I felt like pulling out with my $179 Menard's cooker. There was a total of 18 teams from 3 different states. I asked another team if they would help me lift mysmoker off my trailer. I was nervous and slightly unprepared, Burnt my chicken, had it to close to the fire box, but turned it in any way. My brisket forgot part of my injection / marinade, but worked with what I had. Ribs went good. When they said to meet for announcing the winners, my wife said I had to go, I was depressed. Went down reluctantly, to my surprise my Ribs finished 1st, When they called my name, my wife had to tell me to go up for my trophy, I was in shock. Then they called my name again forGrand Champion, I was dumb founded,I credit my winning to you and what you taught me. On my ribs all 6 judges voted them the best, hands down. My wife did up the boxes and they looked great, she even made my burnt chicken look good. Thanks again chuck Feel free to share my experience with others, David can still kick Goliaths ass. they were all great guys to be around. They all invited me buy if I had any questions. Overall a great time. Winning helps.

When I woke up the morning of the class I was not looking forward to sitting all day in a boring "cooking" class. But I have to say I had an excellent time, Bob Snelson gave a great presentation and kept your interest the whole class. I really enjoyed this class. I think it could have been better for a novice like me, if we'd each had our own grills, rather than using your smoker, because then we'd know more about how to do it at home on our own grill. However I must say that your smoker makes wonderful food and since I've never gone to the American Royal cookoff, I now know what I've been missing! I did enjoy making my own spice blend and being able to ask questions one on one. You are a great teacher and cook!

The first thing this class did was confirm without a doubt, I love BBQing/Smoking. Bob made it a fun time by simply being himself. The jokes, stories, and knowledge were great. The books are perfect. They let the class spend more time listening insteat of writing. Also the recipies are great. I think its also great that the students get to take meat home. At first I thought the cost was alot but I also know it cost alot to put a show on. I've been smoking competitively for quite a few years now, so I was sort of reluctant about attending a class for doing something I felt I already had a grasp on. Bob was I wrong! Enjoyed the presentation style. Mixing personal highs and lows. into the class. Results that you tasted that day. Presentation skills went beyond a bed of lettuce. Sauses was not as I expected, It changed my thinking about application and strenght of flavor. A mistake I have been making for years. Approved of the little tips that have only been collected for many years. Glad I have them now. Wood and burning training has also changed my ineffient way of cooking. Bob taught an old dog, new tricks :)
